How to Fry and Grill Zucchini Without It Becoming Mushy

Zucchini cooks quickly and is forgiving, as long as you don’t boil it. In water, it quickly becomes limp and watery. Frying or grilling adds color and a firm bite.

Is it better to fry zucchini than to boil it?

Yes. Zucchini is mostly water, so boiling makes it mushy and bland. Frying or grilling evaporates the moisture and adds color and flavor. That’s why we avoid boiling here.

How do you fry zucchini until golden brown?

Cut the zucchini into slices about 0.5 cm thick and fry them over medium-high to high heat for about 5 minutes until golden brown. Don’t overcrowd the pan: too much zucchini at once releases moisture, causing it to steam instead of fry. It’s better to cook in two batches.

How do you grill zucchini with nice grill marks?

Lightly brush the slices with oil and grill them over high heat in a hot pan for a few minutes per side until grill marks appear. Turn them only once to keep the marks clear. This way, you get firm zucchini with a lightly smoky flavor.

Do you need to peel or salt zucchini?

Peeling is not necessary: the skin is thin, edible, and helps keep the slices intact. Salting (letting it sweat with salt) is optional; it draws out some moisture, but with quick, high-heat cooking, it’s usually not needed.
